A delicious turkey sandwich w/ an extra kick from arugula.

6 c arugula leaves, divided ( I used baby)

3/4 c mayo

Salt and Pepper to taste

4 ciabatta rolls, halved (I used onion & poppyseed flavored)

3/4 lb thinly sliced smoked deli turkey

3/4 c crumbled blue cheese

Divide turkey evenly among bottom halves of rolls. Top w/cheese,chopped red onions, remaining arugula and top of rolls.
