6fad57adf2becab3d2e99d81f9b59160802e2b1c.jpg 1.  Put the garlic cloves on a chopping board and crush them under the blade of a large knife. Sprinkle them with the salt, then work them with the knife blade into a smooth paste.

2.  Scrape the garlic paste into a bowl and add the egg yolk and the lemon juice. Using a hand-held electric mixer, beat everything together. Very gradually beat in the olive oil to make a thick, mayonnaiselike mixture.
