Ingredients:

    For the salad:
  • For the lettuce I used baby butter, mache and radicchio.
  • 1 scoop wild rice
  • Sliced avocado
  • slices Mandarin orange
  • Sliced red and yellow bell peppers
  • whole Green and yellow beans, and raw
  • Greek feta cheese, crumbled
  • Candied walnuts
  • For the dressing:
  • Lemon curd
  • Sparkling sake, or sparkling juice
  • Splash of grapeseed oil
  • Splash of white balsamic vinegar

Directions:

Prepare rice per package instructions. You will need about 1/4th cup per salad.

Allow rice to cool to room temperature or refrigeration until ready to use.

Prepare the dressing by placing all ingredients in a bowl, whisking briskly until incorporated.

Serve dressing on the side, or drizzled over salad.

Cooks' note:
Left over rice works perfectly here, or you can prepare a small amount of rice per salad.

Because you are slicing the meat, you don’t have to use the most expensive cut. You can get by with London broil, which nowadays is usually chuck, flank, or sirloin steak. If you want to use a more luxurious cut, buy a New York steak, either a shell (with the bone) or a strip (without the bone).
