To shape rolls, round the dough slightly to tighten its surface. Weigh it so you know how much you have and how to divide it. You'll need about 2 1/2 ounces per roll. Using a bench scraper or knife, cut the dough into equal pieces, then round each to make them easier to section into rolls. Now ..

Scones are a lot like biscuits, but the dough is lightly sweetened. This recipe can accommodate any sort of dried fruit. Makes 8 scones.

These are rolls that anyone can make easily. I literally make a triple batch twice a week! I can guarantee that you've never had a better roll. I found the recipe at Real Mom Kitchen, but adapted it myself.
